Hamburger Vegetarianissimo - The Very Veggie Burger



Sei vegetariano o vegano, ma hai una voglia incontenibile di mangiarti un buon hamburger? Niente paura! Ecco la ricetta del nostro Hamburger Vegetarianissimo. Non dimenticate di sperimentare con varie spezie. Buon appetito!

Are you vegetarian, or vegan, and yet you crave a burger? Fear you not! Follow the simple recipe of our Very Veggie Burger and enjoy a healthy treat! Don't forget to experiment with spices. 



INGREDIENTI (per 4 hamburger)
INGREDIENTS (for 4 burgers)

·      350 gr di ceci lessati

·      Olio extravergine d'oliva

·      Latte vegetale (di mandorla, o riso, se piace)

·      3 patate lesse di media grandezza

·      Prezzemolo tritato

·      Pangrattato

·      Sale e pepe a piacere

·      Curry o aglio a piacere

·      350g of cooked chickpeas

·      Extra-Virgin Olive Oil

·      Almond Milk (optional)

·      3 Medium-Sized Boiled Potatoes

·      Chopped Parsley

·      Bread Crumbs

·      Salt and Pepper to taste

·      Curry Powder or Garlic to taste





                  PREPARAZIONE (English version below)


Schiacciate i ceci e le patate, per comodità passateli al mixer con un filino d’olio ed aggiungete poco latte vegetale, oppure un po’ di acqua tiepida. Dovrete ottenere una purea non troppo liquida. Trasferire il composto in una ciotola ed amalgamare con un cucchiaio, aggiungendo sale, pepe, prezzemolo tritato a piacere e, se vi piace, anche un pizzico di curry o dell’aglio tritato. Aggiungere pane grattato per regolare la consistenza. Dividere il composto in parti uguali, formando delle palline di egual misura. Appiattitele per ottenere la forma di un hamburger, usando, ad esempio, il coperchio di un vasetto di marmellata. Scegliete la taglia che più vi conviene.

Friggere in una padella in olio extravergine oliva. Dorare da ambo i lati. Dopo la doratura potrete finire la cottura in padella, oppure in forno per 15 minuti a 180 gradi.

PREPARATION


Mash the cooked chickpeas and the boiled potatoes. You can use a mixer to make it easier. Add some olive oil, and, if you like it a little bit of almond milk, alternatively, you can use some warm water, until you reach the right consistency, which cannot be too watery. Put everything into a bowl and keep mixing everything using a spoon, while adding salt, pepper, and chopped parsley to taste. If you like it, add a pinch of curry powder and two cloves of finely chopped garlic too. Add a cup of breadcrumbs to adjust the consistency. Divide the mixture into equal parts, forming small balls of equal size. Flatten them to get them into the shape of a burger, by using, for example, the lid of a jam jar. Choose the size that suits you most.
In a frying pan, heat some olive oil.  When hot, quickly fry your burgers until brown on both sides. After this, you can decide whether to continue to cook them in the pan (with the help of a lid for another 10-15 minutes), or whether to finish cooking them cin the oven for 15 minutes at 180C degrees (356F).

Bocconcini di Vitello alla Birra - Brewed Veal Stew

Ingredienti – Ingredients






800 g di Polpa di Vitello


3 Scalogni (oppure una cipolla )


6 Cucchiai di olio d'oliva


Un po’ di farina Bianca


Sale e Pepe qb


1 Bicchiere di birra


Acqua (oppure brodo vegetale)


Prezzemolo tritato         (facoltativo)
800 g Lean Veal


3 Shallots (or one big onion)
 

6 Tablespoons of olive oil


A little bit of plain white flour

Salt and Pepper to taste


1 Glass of Beer


Water (or vegetable broth)

Chopped parsley (optional)






Preparazione (English version below)

Tagliare la carne a bocconcini e passarla nella farina bianca nella quale avremo aggiunto un po’ di pepe e un pizzico di sale. Tritare lo scalogno (o la cipolla) come per soffritti. Mettete la vostra capiente pentola sul fuoco, aggiungete quindi l’olio d’oliva (meglio se extravergine), fate poi appassire lo scalogno ed infine aggiungete i bocconcini e fateli dorare. Sfumate il tutto con la birra. Quando la birra è evaporata, aggiungete 2 bicchieri di acqua tiepida (oppure di brodo vegetale) e cuocete a fuoco lento. Quando il tutto si è ristretto, controllate se i bocconcini sono ben cotti e belli teneri, in caso aggiungete ancora un po’ d’acqua fino a cottura.  Il Tempo cottura è di circa 2 ore, dipendentemente dalla carne. Quando i bocconcini sono pronti, fate restringere il sughetto che deve essere denso e non acquoso. Aggiungete, alla fine, del prezzemolo tritato, se vi piace.







Preparation


Cut the meat into small pieces and roll them in flour, in which you’ll have added a pinch of salt and pepper. Chop finely the shallots (or the onion). Put a large pot on the stove, add the olive oil (preferably extra-virgin olive oil) and fry the chopped shallots/onion. When blonde, gild the meat. Pour a glass of beer in the pot, and when the it has evaporated, add 2 cups of warm water (or vegetable broth) and simmer at very low heath. The cooking time is about 2 hours, depending on the meat. Check from time to time to see if you need more water. They meat should remain tender. When the stew is ready, simmer to reduce the sauce to be thick and not watery. Add some chopped fresh parsley on top, if you like it!
