Spaghetti Officina 56



Ecco la ricetta per il sugo dei nostri spaghetti Officina 56. Buon Appetito!

INGREDIENTI 
(per 4 persone)

INGREDIENTS

150 g di mandorle tritate

Una confezione di panna da cucina

Una noce di burro

150 g di speck tagliato sottile 

80 g di pecorino a scaglie

Sale e Pepe q.b.


(500 g di spaghetti) 

150 g of Minced Almonds

Cooking milk cream 

A spoonful of butter

150 g of thinly sliced Speck (Northern Italian dried meet similar to Parma Ham, but smoked)

80 g of Pecorino Cheese (Shavings)

Salt and Pepper to taste

(for 4 people, boil 500 g of spaghetti)




PREPARAZIONE (English version below)


Tostare le mandorle tritate, friggendole in una noce di burro. Aggiungere quindi speck appena appassito e la panna. Scaldare il tutto ma non bollire. Conservare 8 fettine di speck senza cucinarle. Una volta che gli spaghetti al dente sono pronti, aggiungeteli direttamente nella padella col sugo e amalgamate il tutto per bene. Serviteli in quattro piatti, uno per ogni porzione, e arrotolate le fettine di speck restanti a forma di rosa in ogni piatto e aggiungete il pecorino a scaglie fresco. Mettere il piatto in un forno riscaldato per 50 secondi e quindi servire il tutto. Buon appetito!




PREPARATION

In a deep frying pan, add a spoonful of butter and fry your minced almonds. In the same pan, add some slices of speck (smoked) ham (but make sure to keep around 8 thin slices for later), and some milk cream. Warm everything up, but make sure not to boil it. Once your spaghetti are ready (and al dente, i.e. do not overcook them), drain them and add them directly into the pan with the sauce. Mix everything together slowly. Serve your four portions of spaghetti in four dishes and roll the remaining slices of speck to form a little rose to place on top. Add the Fresh Pecorino cheese shavings on top. Place the dish in a pre-heated oven for 50 second and serve hot. Buon Appetito!

GNOCCHI

Gli Gnocchi, uno dei piatti più saporiti e più amati della tradizione culinaria italiana. Sono semplicissimi da preparare, se seguirete i nostri consigli!


Gnocchi [and please, pronounce it like this] are one of the most beloved dishes of the Italian culinary tradition. And they are very simple to make, if you'll follow our instructions.




INGREDIENTI

1 kg patate

200 g di farina 00

1 uovo

Sale

(facoltativo: io aggiungo del parmigiano grattugiato nell’impasto)



Per il condimento:

Parmigiano
Qualche foglia di salvia
Burro
1 Kg of potatoes

200 g white plain 00 flour

1 egg

Salt

(optional: my secret is to add a little bit of grated Parmesan cheese in the mix itself)



For the sauce:

Parmesan cheese
Some leaves of age
Butter


 PREPARAZIONE (English version below)


1.    Bollire le patate in un'ampia pentola di acqua salata
2.    Pelare le patate quando sono ancora calde
3. Schiacciare le patate con uno schiacciapatate o semplicemente con una forchetta.
4.   Quando l’impasto è omogeneo aggiungere farina, uovo, sale (e parmigiano), e amalgamare tutti gli ingredienti per bene
5.    Versate il tutto sul piano di lavoro infarinato o su un asse di legno e non esitate a aggiungere un po’ di farina se il composto è troppo appiccicoso e impossibile da lavorare.
6.   Lavorare l’impasto in piccoli rotolini e tagliarli in segmenti di circa 1,5-2 cm. Se volete potrete proprio formare delle piccole palline come nella fotografia qui sotto.
7.    Quando pronti, cuocere in una pentola di acqua salata bollente.
8.    Gli gnocchi saranno pronti quando galleggiano, a quel punto "pescateli" con un piccolo scolapasta, un cucchiaio, o con una ramina, ma non scolateli nello scolapasta tutti insieme, rischiate di formare un gnocco gigante un po' difficile da gustare...

9.    Condimento suggerito: Burro e salvia. Fate sciogliere il burro in una padellina, aggiungete la salvia. Grattugiate del parmigiano direttamente sugli gnocchi già nel piatto fumanti e, alla fine versate il burro e salvia mentre frigge (ma attenzione a non bruciarlo...)

PREPARATION

1.    Boil a large pot of water and add a spoonful of salt.
2.    Add the potatoes in boiling water (as they are, without peeling them)
3.    Once they’re boiled, peel them while they’re still quite warm (it makes it easier to peel them this way)
4.   In a bowl, mash the potatoes using a potato masher or a fork
5.    When the mixture is smooth, add the flower, the egg, a pinch of salt (and some parmesan cheese – shhh little secret ;) ) and mix all the ingredients quickly
6.    Transfer everything on a clean table or a wooden tray, and remember to cover it with a little bit of flour first. If the mixture is too moist and impossible to work, do add some more flour (but not too much, otherwise your gnocchi will be as hard as rocks!)
7.    Roll parts of the mixture in little rolls and cut them about 2 cm apart (this will give you kind of square-looking gnocchi; if you’d prefer them round like in the picture above, just work them a little bit with your hands)
8.    When your gnocchi are ready, you can put them in boiling water (remember to add a spoonful of salt to the water).
9.    The gnocchi are ready when they float on the surface of the water. When they float, you’ll have to “fish” them out of the water using a very small colander, or a spoon, or a tool like the one in the photo. DO NOT use a big colander to drain them all together- you risk to form one enormous ball, which won’t be very nice to eat…

10.                  Suggested Sauce: Butter and Sage, the most traditional recipe! In a frying pan, melt a little cube of butter and add some leaves of sage to it. In the meantime, you’ll have arranged your boiled gnocchi on a warm plate and grated some fresh Parmesan cheese on top of them. When the butter (with sage) is frying (you can hear the noise, but careful not to burn it - it does not have to turn brown), pour your frying butter on top of the gnocchi already covered by Parmesan cheese… Simply delicious!
