Spaghetti Officina 56

INGREDIENTI 
(per 4 persone)

150 g di mandorle tritate

Una confezione di panna da cucina

Una noce di burro

150 g di speck tagliato sottile 

80 g di pecorino a scaglie

Sale e Pepe q.b.


(500 g di spaghetti) 

150 g of Minced Almonds

Cooking milk cream 

A spoonful of butter

150 g of thinly sliced Speck (Northern Italian dried meet similar to Parma Ham, but smoked)

80 g of Pecorino Cheese (Shavings)

Salt and Pepper to taste

(for 4 people, boil 500 g of spaghetti)




PREPARAZIONE (English version below)


Tostare le mandorle tritate, friggendole in una noce di burro. Aggiungere quindi speck appena appassito e la panna. Scaldare il tutto ma non bollire. Conservare 8 fettine di speck senza cucinarle. Una volta che gli spaghetti al dente sono pronti, aggiungeteli direttamente nella padella col sugo e amalgamate il tutto per bene. Serviteli in quattro piatti, uno per ogni porzione, e arrotolate le fettine di speck restanti a forma di rosa in ogni piatto e aggiungete il pecorino a scaglie fresco. Mettere il piatto in un forno riscaldato per 50 secondi e quindi servire il tutto. Buon appetito!




PREPARATION

In a deep frying pan, add a spoonful of butter and fry your minced almonds. In the same pan, add some slices of speck (smoked) ham (but make sure to keep around 8 thin slices for later), and some milk cream. Warm everything up, but make sure not to boil it. Once your spaghetti are ready (and al dente, i.e. do not overcook them), drain them and add them directly into the pan with the sauce. Mix everything together slowly. Serve your four portions of spaghetti in four dishes and roll the remaining slices of speck to form a little rose to place on top. Add the Fresh Pecorino cheese shavings on top. Place the dish in a pre-heated oven for 50 second and serve hot. Buon Appetito!

Bocconcini di Vitello alla Birra - Brewed Veal Stew

800 g di Polpa di Vitello


3 Scalogni (oppure una cipolla )


6 Cucchiai di olio d'oliva


Un po’ di farina Bianca


Sale e Pepe qb


1 Bicchiere di birra


Acqua (oppure brodo vegetale)


Prezzemolo tritato         (facoltativo)
800 g Lean Veal


3 Shallots (or one big onion)
 

6 Tablespoons of olive oil


A little bit of plain white flour

Salt and Pepper to taste


1 Glass of Beer


Water (or vegetable broth)

Chopped parsley (optional)






Preparazione (English version below)

Tagliare la carne a bocconcini e passarla nella farina bianca nella quale avremo aggiunto un po’ di pepe e un pizzico di sale. Tritare lo scalogno (o la cipolla) come per soffritti. Mettete la vostra capiente pentola sul fuoco, aggiungete quindi l’olio d’oliva (meglio se extravergine), fate poi appassire lo scalogno ed infine aggiungete i bocconcini e fateli dorare. Sfumate il tutto con la birra. Quando la birra è evaporata, aggiungete 2 bicchieri di acqua tiepida (oppure di brodo vegetale) e cuocete a fuoco lento. Quando il tutto si è ristretto, controllate se i bocconcini sono ben cotti e belli teneri, in caso aggiungete ancora un po’ d’acqua fino a cottura.  Il Tempo cottura è di circa 2 ore, dipendentemente dalla carne. Quando i bocconcini sono pronti, fate restringere il sughetto che deve essere denso e non acquoso. Aggiungete, alla fine, del prezzemolo tritato, se vi piace.







Preparation


Cut the meat into small pieces and roll them in flour, in which you’ll have added a pinch of salt and pepper. Chop finely the shallots (or the onion). Put a large pot on the stove, add the olive oil (preferably extra-virgin olive oil) and fry the chopped shallots/onion. When blonde, gild the meat. Pour a glass of beer in the pot, and when the it has evaporated, add 2 cups of warm water (or vegetable broth) and simmer at very low heath. The cooking time is about 2 hours, depending on the meat. Check from time to time to see if you need more water. They meat should remain tender. When the stew is ready, simmer to reduce the sauce to be thick and not watery. Add some chopped fresh parsley on top, if you like it!
